I can see how a mandoline would help for this recipe, but I'm sure you could use a knife and a very steady hand ;)

I earmarked this recipe in that issue also. Glad to see it turns out excellent.

This looks incredible--I'm making it on Sunday!!!
One nit-picky, non-meat-eater suggestion, though: please don't tell us a recipe is vegetarian if it requires chicken stock. :)

@ Jenna -- Oh my gosh! Sorry! I guess that shows just how carnivorous Clay and I are, that we'd think something with chicken stock in it is still vegetarian!

Of COURSE you're right. And, needless to say probably, you could totally use vegetable stock in this recipe instead. Or probably even just water, although the flavors might not be as strong.
